Acidity is one of the easiest things to feel in wine — even if you’ve never studied it.

Think lemon juice, green apple or very crisp sparkling water: your mouth starts producing saliva almost immediately.

Wine works the same way.

WHY IT CHANGES THE WINE

More acidity can make a wine feel:
fresher / sharper / lighter / more energetic

Less acidity can make it feel:
rounder / softer / broader / warmer

Neither is automatically better.

It is preference.
